Granola bars – often overly sweet when bought and filled with ingredients that don’t please everybody. A fair share of them have nuts, and with schools being stricter on the ‘no-nuts’ policy ideas for healthy snack options get more and more limited. They are a great ‘on the go’ snack, too!
I tried several granola bars and this is one of my family’s favourite. Having said this, I follow the basic amount indications but reduce the sugar, mix and match fruits and seeds as I have them. The cinnamon gives a nice twist (I do increase the amount as we do like the cinnamon flavour).
I never have the same seeds and fruits in my house so the bars always vary when we make them! Never gets boring!
A quick and easy snack and kids can help – so why not try this weekend?
200gr oats (natural, not quick oats!)
100gr sun flower seeds
50gr sesame seeds
100gr lights brown sugar
1 tbsp cinnamon
100gr dried fruit (cranberries, raisons, blueberries, apricots etc or mix and match)
If you like and there are no allergies add 50gr nuts.
Play around with seeds – eg add pumpkin, pinenuts, chia seeds etc etc
Heat the oven to 160 deg C.
Mix oats and seeds (and nuts if added) and toast in the oven for 7-10 min.
In the meantime warm the butter, honey and sugar, stirring until the butter is melted.
Add the oats mixt, dried fruits and cinnamon.
Line a baking tin (18x25cm) or baking tray with a baking sheet.
I use a baking tray, then the bars are nice and thin.
Press down firmly with your hands (you may want to use a baking sheet to be able to press the mixture down firmly).
Bake on 160deg C fr+/- 25 min.
Cool down and cut or break into pieces. Store airtight.
